Coffee drinks can have very different kinds of foam. The glossy microfoam poured into a latte usually comes from milk textured with an espresso machine’s steam wand. A whipped-cream topping comes from a suitable mixture prepared in a compatible cream whipper, which may use a nitrous oxide (N2O) charger. A charger is not a substitute for a steam wand and does not by itself set foam temperature or dispensing speed.
Steamed milk microfoam for latte art
Latte art relies on textured milk poured into espresso. Breville’s latte-art guide describes starting with cold milk and using a steam wand to introduce air and form a smooth texture. The steam wand and barista technique shape the milk; a culinary cream charger is not part of that process.
Whipped toppings from a cream whipper
A cream whipper can prepare a separate whipped topping for a coffee, hot chocolate or dessert drink. The result depends on the recipe, the dispenser’s capacity, the compatible charger and proper cleaning. The iSi Cream Profi Whip instructions advise using a cold mixture, observing the maximum fill capacity and cleaning residue from the spout and head valve. Follow the instructions for the exact whipper you own.
Choosing the right approach
- For a latte-art surface, use suitable milk, an espresso machine with a steam wand and that machine’s instructions.
- For a separate cream topping, use a compatible cream whipper and its specified culinary charger.
- For a nitrogen-infused cold brew, use an N2 system designed for that beverage; an N2O whipped topping is different. See our nitro coffee comparison.
Why equipment claims matter
Ordinary sealed chargers do not contain user-adjustable pressure controls, temperature settings or customizable dispensing mechanisms. Features such as those belong, where available, to a particular dispenser, regulator or coffee machine. Check a manufacturer’s specification for a real product before relying on marketing claims about a new technology.
Our charger and dispenser guide explains how the parts differ. Browse cream dispensers and chargers only after confirming compatibility with the equipment you plan to use.
